The Shinshu Nanshin area has old custom of eat horse sashimi. Horse meat is low-cholesterol and high protein when compared with beef or pork, so we created our own horse meat rice bowl! Sliced onion on rice, topped with horse meat marinated in a special sauce made from red wine and garlic. Tasty and unexpectedly light, this dish is also popular with ladies, too.
